Apple Spice Cupcake with Maple-Brown Sugar Frosting

Ingredients

  • Cupcakes1 1/3 cups canola oil

  • 2 cups sugar

  • 3 eggs

  • 1 tsp vanilla

  • 3 cups flour

  • 2 tsp cinnamon

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 tsp nutmeg

  • 1/2 tsp ginger

  • 1/4 tsp allspice

  • 2 apples, peeled and diced

  • Frosting4 oz cream cheese

  • 2 cups powdered sugar

  • 1/4 cup brown sugar

  • 1/4 cup maple syrup

Ring in the fall with autumnal cupcakes.

Directions

  • In a large mixing bowl, combine oil, sugar, eggs, and vanilla on high speed for 2 minutes or by hand for 5 minutes.
  • In a separate bowl, whisk together flour, cinnamon, baking soda, salt, nutmeg, ginger, and allspice until combined.
  • Slowly add to large mixing bowl and stir just until combined. Fold in apples.
  • Pour into prepared muffin tins and bake at 350°F for 20 to 25 minutes until they pass the toothpick test. Cool completely before frosting.
  • Combine all ingredients for frosting and beat until desired consistency.
