Pomegranate-Honey Roasted Game Hens

Ingredients

  • 1 cup pomegranate juice

  • 1/2 cup honey (plus 3 Tbs)

  • 1/2 tsp ground coriander

  • 1/2 tsp cinnamon

  • 1/2 tsp allspice

  • 1/4 tsp cayenne pepper

  • 6 cloves garlic, smashed

  • 3 game hens, split in half

  • Salt and pepper

  • Pomegranate seeds (garnish)

  • Roasted pistachios, chopped (garnish)

A festive main course dish that is subtly sweet and laden with spices. Scalloped potatoes would be an ideal side dish.

Directions

  • Mix pomegranate juice, ½ cup honey, coriander, cinnamon, allspice, cayenne pepper, and garlic.
  • Pour the mixture over the game hens. Cover and marinate overnight, or for at least 8 hours in the refrigerator, turning occasionally.
  • Drain the game hens, reserving the marinade.
  • Simmer the marinade, covered for 10 minutes; reserve.
  • Season the game hens with salt and pepper.
  • Bake at 450°F, basting frequently with the reserved marinade, until game hens are just firm to the touch (about 25 minutes).
  • Remove from the oven and let rest covered with a tea towel for 5 minutes.
  • Brush each half with 1/2 tablespoon of honey. Garnish with pomegranate seeds and chopped pistachios.
