Ingredients

  • 4 small bone-in chicken breasts, skin removed

  • 1 tsp garlic salt

  • Freshly ground black pepper, to taste

  • 2 tsp garam masala

  • 1/2 cup flour

  • 1 Tbs canola oil

  • 1 cup garbanzo beans, drained and rinsed

  • 1/2 cup golden raisins

  • 2 Tbs lemon juice

  • 1 1/4 lbs small red potatoes

  • 3/4 cup frozen pearl onions, thawed

  • 1 cup baby carrots

  • 3/4 cup reduced-sodium chicken broth

  • 8 oz small baby bella or white mushrooms

Slow food at it's best. Juicy raisins and protein packed garbanzo beans are served with tender bone-in chicken.

Directions

  • Combine the garlic salt, pepper, and garam masala on a dinner plate. Spoon flour on to second dinner plate. Coat each chicken breast in the spice mixture; then dredge well in flour.
  • Heat oil in a large skillet. Add chicken and cook over medium-high heat until chicken is golden brown on both sides (approximately 3-4 minutes per side). Cook chicken in two batches if necessary so as not to crowd the pan
  • Place chicken in a large slow cooker and add the garbanzo beans, raisins, lemon juice, potatoes, pearl onions, carrots, chicken broth, and mushrooms. Cover slow cooker and cook on high for 4 hours or on low for 8 hours.
