Grandma Kirschner’s Date Nut Bread

Ingredients

  • 8 oz pitted, dried dates

  • 3/4 cup chopped walnuts or hazelnuts

  • 1 cup raisins

  • 1 tsp baking soda

  • 1 cup boiling water

  • 2 cups white flour

  • 1 cup sugar

  • 1 tsp baking powder

  • 2 egg whites

  • Non-fat cooking spray

Dense and sweet, this tea cake is delicious without a spread.

Directions

  • Preheat oven to 350°F (176.6°C). Prepare a loaf pan by spraying with non-fat spray. Coarsely chop dates and combine with nuts and raisins in a bowl. Sprinkle baking soda over this mixture. Pour boiling water over the contents of the bowl. Cover and set aside while mixing the rest of the ingredients.
  • Combine flour, sugar, baking powder, and egg whites in another bowl and mix well. Add first bowl's ingredients to second bowl and mix well. Turn into prepared loaf pan and bake for 1 hour. Let cool before slicing.
