Spicy Black-Eyed Peas

Ingredients

  • 1 16 oz package black-eyed peas

  • 1/2 lb smoked bacon, diced

  • 2 stalks celery, diced

  • 1 sweet onion, diced

  • 2 cups picante sauce

  • 3 cups water

These spicy beans will make you a convert—you'll be making them every New Year's Day.

Directions

  • Soak the beans overnight in water.
  • Cook bacon until crisp. Add bacon and the bacon drippings to the beans. Add celery, onion, and picante sauce.
  • Add water to beans, bring to a boil, and reduce to a simmer. Cook beans until they are tender, 45 minutes to 1 hour.
