Farmer's Frittata

Ingredients

  • 2 Tbs olive oil

  • 1/2 cup smoked country sausage

  • 1/4 cup bell peppers, chopped

  • 1/4 cup onions, chopped

  • 6 eggs

  • 1 pinch kosher salt, or to taste

  • 1 pinch pepper, or to taste

  • 1/4 cup shredded pepper jack cheese

  • 2 small tomatoes, sliced

Start on the stove and finish under the broiler. It will puff up when broiled, making it wonderfully light.

Directions

  • Preheat oven broiler. Preheat 12-inch, oven-safe skillet. Drizzle skillet with olive oil. Brown sausage.
  • Add bell pepper and onion and sauté until tender. Then, spread sausage and vegetables in an even layer on the bottom of the skillet; set aside.
  • Scramble the eggs and add kosher salt and pepper to taste.
  • Pour the scrambled eggs over the vegetables and sausage. Cook over medium heat until eggs are set up on the sides of the skillet. Sprinkle with cheese and place tomatoes on top of frittata.
  • Bake under the broiler until eggs are set and frittata is lightly browned and fluffy.
