Greek Quinoa Salad

Ingredients

  • 1 cup quinoa

  • 2 cups water

  • 1/2 cup chopped seedless cucumber

  • 1/2 cup cherry tomatoes

  • 1/2 cup chopped red bell peppers

  • 1/2 cup chopped green bell peppers

  • 2 Tbs chopped fresh parsley

  • 1 Tbs chopped fresh mint

  • 1 lemon, juiced

  • 2 Tbs olive oil

  • 1/4 tsp cumin

  • 1/2 tsp kosher salt

  • 1/4 cup unsalted sunflower seeds (optional)

Quinoa is already high in protein but you could add bacon to up the protein factor.

Directions

  • Cook quinoa according to package directions in water.
  • Add all other ingredients to a large bowl.
  • When quinoa is cooked, add to bowl and stir to combine.
  • Let sit for about 15 minutes before serving so that the flavors can combine.
