Homemade Mayonnaise with Olive Oil

Ingredients

  • 1 egg yolk

  • 1/2 tsp fine sea salt

  • 1/2 tsp dry mustard

  • 2 pinches sugar

  • 1 lemon, juiced

  • 1 Tbs white wine vinegar

  • 1 cup olive oil

Once you make mayo from scratch, you'll never go back!

Directions

  • Combine egg yolk, salt, dry mustard, and sugar in a large bowl.
  • Whisk to combine by hand or with an electric mixer with a whisk attachment. You can also use a blender or food processor. Add lemon juice and vinegar and whisk again.
  • While whisking, drizzle in the olive oil very slowly. This is where an electric mixer will come in handy. Continue drizzling slowly until an emulsion has formed and oil is incorporated into the egg.
  • Refrigerate in an airtight container for up to 2 weeks.
