Fresh Fig Salsa

Ingredients

  • 2 1/2 cups diced fresh California figs

  • 1/2 small red onion, finely diced

  • 1 firm and ripe tomato, diced

  • Salt and freshly ground pepper, to taste

  • 1 jalapeño pepper, ribs and seeds removed, diced

  • 2 Tbs chopped fresh cilantro

  • 2 Tbs olive oil

Spicy and sweet—make this salsa mild by leaving out the jalapeño pepper.

Directions

  • Combine figs, onion, and tomato in a bowl. Season with salt and pepper.
  • Add lime juice, jalapeño, cilantro, and olive oil.
  • Mix together and let stand for at least 1 hour to meld flavors.
