Oatmeal Currant Cookies

Ingredients

  • 2 sticks butter

  • 1 1/2 cups bread flour

  • 1 tsp kosher salt

  • 1 tsp baking soda

  • 1/2 cup sugar

  • 1 cup brown sugar

  • 2 large eggs

  • 2 tsp vanilla extract

  • 3 cups old-fashioned, uncooked oats

  • 1 cup dried currants

Currants are full of flavor and compliment oatmeal cookies very nicely.

Directions

  • Preheat oven to 375°F. Melt the butter in the microwave until it is half melted.
  • Sift the flour, salt, and baking soda together; set aside.
  • Add sugars and butter to a mixing bowl. Cream butter and sugars at medium speed until light in color and fluffy.
  • Add the eggs one at a time and continue to mix again until fluffy.
  • Add vanilla extract and mix until well combined.
  • Slowly add the flour mixture a little at a time and mix until just well combined. Do not over-mix. Add oatmeal and mix until combined.
  • Remove from mixer and fold in the currants. Bake at 375°F until golden brown—about 10–12 minutes.
