Onion Mango Chutney

Ingredients

  • 1 cup chopped onion

  • 1 cup cubed mango or papaya

  • 1/3 cup dark or seedless raisins

  • 2 Tbs minced candied ginger

  • 2 tsp grated lime peel

  • 3 Tbs lime juice

  • 1 cup sugar

  • 1/2 cup brown sugar

  • 6 Tbs cider vinegar

  • 3/4 tsp mustard seed

  • 3/4 tsp cumin seed

  • 3/4 tsp fennel seed

  • 1 tsp minced garlic

  • 1/4 tsp salt

Mango chutney always comes in handy and ups the flavor of any dish—serve as a condiment with meat, fish, or curry, or spread on a sandwich.

Directions

  • Combine all ingredients in 10-inch skillet, bring to boil.
  • Simmer uncovered until thickened, about 30 minutes while stirring occasionally.
  • Serve as an accompaniment to meats, fish, curries, or sandwiches.
