Ingredients

  • 1 tsp extra-virgin olive oil

  • 1/2 tsp sea salt

  • 1 tsp freshly ground black pepper

  • 2 zucchini

  • 2 yellow summer squash

  • 2 sunburst squash

A hearty addition to any meal throughout the year, roasted veggies make a healthy, quick, easy side dish that packs lots of flavor.

Directions

  • Once you have chopped your veggies and tossed them with the olive oil, salt and pepper, and any other spices you like, spread the cut veggies on a baking sheet and roast at 425 to 450°F for 20 to 30 min until the veggies are tender and slightly browned. Enjoy!
