Sweet Collard Greens with Ham and Beans

Ingredients

  • 1 bunch collard greens

  • 1 cup vegetable broth

  • 1 Tbs maple syrup

  • 1/2 tsp dried mustard

  • 1/2 tsp red pepper flakes

  • Left over ham (as much as you like)

  • Cooked white beans (about 1 can)

  • 1 oz white wine

  • Toasted almonds

Steamed collards leave behind a broth full of sweetness and light.

Directions

  • Steam the collard greens for about 10 minutes in a liquid composed of the vegetable broth, maple syrup, dried mustard, and red pepper flakes.
  • Warm up the ham and beans (soaked and cooked beforehand) in a separate skillet and then de-glaze the pan with the white wine (you can skip this step).
  • Ladle ham and beans into bowls of the steaming broth from the collard greens; top with toasted almonds.
