Panko Crusted Italian Chicken

Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 eggs

  • 1 tsp kosher salt

  • 1 tsp black pepper

  • 1 box Italian-style panko bread crumbs

  • 1/2 cup grated Parmesan cheese

  • Cooking spray

Baked chicken strips that any kid would love to eat.

Directions

  • Preheat oven to 400°F.
  • Cut chicken into strips and add to a large bowl.
  • Scramble eggs and pour over top. Add salt and pepper. Stir to combine and let sit for at least 15 minutes.
  • Combine bread crumbs and Parmesan in a bowl. Bread chicken. Place on a lightly greased baking sheet, or a baking rack on a baking sheet. Sprinkle extra crumbs on top of chicken. Spray with oil.
  • Bake chicken for 30–45 minutes or until it is firm, browned, and has an internal temperature of 165°F.
