Look for round roast that has a clear, red color and is firm to the touch. Make sure to buy it on or before the “sell by” date on the package (the last day it should be offered for sale).
Refrigerate round roast in its original packaging up to four days or freeze for up to two weeks.
Place the roast on a pan, fat side up, in a 325°F (163°C) oven. Roast 2 to 4 hours, depending on the size of the roast and the degree of doneness you prefer. When it is done, remove the roast and let it stand 15 to 20 minutes.
