According to NutraIngredients, the latest breakthrough involves genetically-modified yeast that converts sugar into proteins found in milk. The proteins are then added to a mixture of plant based fats, vitamins, minerals, and other nutrients to create a milk that is vegan and lactose-free. It also has the added bonus of being environmentally friendly, requiring 98% less water and 91% less land use to produce than cow’s milk.
