Rice and Cabbage Soup

Ingredients

  • 1 cup uncooked rice

  • 2 lbs cabbage, trimmed and quartered

  • 2 onions, peeled and chopped

  • 2 Tbs butter

  • 1/2 quart hot chicken broth (or beef broth)

  • Salt, to taste

  • Ground black pepper, to taste

  • 3 Tbs Swiss cheese, grated

Directions

  • Place pot of salted water on stove.
  • Cook rice and cabbage in pot for 1 hour. Drain well and discard water.
  • In saucepan, warm the butter and sauté onions for 5 minutes.
  • Add onions to pot with rice and cabbage.
  • Add hot broth to pot and bring to a boil.
  • Season with salt and pepper.
  • Blend if desired.
  • Sprinkle with grated cheese and serve.
