Ingredients

  • Meatloaf1 large sweet onion

  • 1 large green bell pepper

  • 3 stalks celery

  • 2 cloves garlic

  • 1/2 cup chopped cremini mushrooms

  • 2 1/2 lb ground turkey

  • 1 cup 1% milk

  • 4 slices bread, chopped very finely

  • 2 eggs

  • 2 Tbs Worcestershire sauce

  • 2 tsp kosher salt

  • 2 tsp black pepper

  • 1/2 tsp oregano

  • 1/2 tsp thyme

  • 1/2 tsp cumin

  • 1/2 tsp cayenne pepper

  • 2 tsp smoked paprika

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1 Tbs tomato paste

  • Sauce2 Tbs olive oil

  • 1 med sweet onion, sliced

  • 1/2 cup sliced cremini mushrooms

  • 1 tsp kosher salt

  • 1 small can tomato paste (minus 1 Tbs)

  • 2 Tbs balsamic vinegar

  • 2 Tbs Worcestershire sauce

  • 1 tsp black pepper

  • 1/4 tsp oregano

  • 1/4 tsp thyme

  • 1/4 tsp cumin

  • 1/4 tsp cayenne pepper

  • 1 tsp smoked paprika

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • 1 cup water

A variety of vegetables add extra moisture to this turkey meatloaf.

Directions

  • Preheat oven to 350°F. Chop the onion, green bell pepper, celery, garlic, and mushrooms into small pieces. Add to a large bowl. Add meat, milk, bread, eggs, Worcestershire sauce, spices, and tomato paste.
  • Either incorporate all ingredients well with your hands or use a potato masher.
  • Put meat mixture into a bread loaf pan or shape into a loaf on a large cookie sheet. Cooking on the cookie sheet allows the fat to run away from the loaf.
  • For the sauce, preheat a skillet. Drizzle with olive oil. Add onions and mushrooms. Sprinkle with a little kosher salt and sauté until tender. Add tomato paste, vinegar, Worcestershire sauce, spices, and water.
  • Mix well and bring to a boil. Reduce to a simmer and let reduce and thicken until the sauce reaches the desired consistency.
  • Put sauce on top of meatloaf. Cook for 50 to 60 minutes.
