Fried Rice with Shiitake Mushrooms

Ingredients

  • 2 eggs, beaten

  • 2 Tbs soy sauce, plus 1 tsp

  • 1 Tbs sesame oil, plus 1 tsp

  • 1 Tbs olive oil

  • 1/2 sweet onion, diced

  • 1/2 green bell pepper, diced

  • 1/2 red bell pepper, diced

  • 1/2 lb fresh snow peas

  • 1 clove garlic, minced

  • 2 stalks celery with leaves

  • 1 cup sliced shiitake mushrooms

  • 2 cups cooked rice

  • 1/2 cup shredded carrots

  • 3 stalks green onion, sliced

After you cook the rice, try spreading it out on a cookie sheet so that it cools quickly and dries a little.

Directions

  • Preheat large skillet or wok. Add 1 tsp of soy sauce to the beaten eggs. Add 1 tsp sesame oil to the preheated wok and scramble eggs until set. Remove from wok and set aside.
  • Add 1 Tbs sesame oil and olive oil to wok. Add onions, green and red bell peppers, snow peas, garlic, and celery to wok. Stir fry for 1 minute. Add mushrooms and stir fry for 1–2 minutes longer.
  • Add cooked rice, carrots, and 2 Tbs soy sauce. Add more olive oil if necessary. Cook the rice for about 5 minutes, until heated through.
  • Add cooked eggs and green onions, and cook for 1 minute more before serving.
