Honey Garlic Ginger Stir Fry

Ingredients

  • 1 pinch kosher salt, or to taste

  • 1 pinch pepper, or to taste

  • 2 boneless, skinless chicken breasts, chopped

  • 2 Tbs olive oil

  • 1 1/2 cups fresh shiitake mushrooms, sliced

  • 7 baby bok choy (or 1 large bok choy), chopped

  • 1 Tbs freshly grated ginger

  • 2 cloves garlic, grated

  • 2 Tbs honey

  • 1 cup dry white wine

Chicken and bok choy stir fried with plenty of garlic and ginger.

Directions

  • Preheat skillet. Salt and pepper chopped chicken. Drizzle pan with olive oil.
  • Add chicken to preheated pan. Sauté until browned on each side.
  • Add mushrooms, bok choy, ginger, garlic, honey, and wine.
  • Cook over medium heat until mushrooms are tender. Serve over steamed rice.
