Lamb Chops with Tzatziki

Ingredients

  • 1/4 cup olive oil

  • 2 whole lemons, juiced

  • 1 Tbs dried lavender

  • 1 clove garlic, chopped

  • 1 jalapeño chile (ribs and seeds removed for less heat), minced

  • 1 lamb rack

  • 1 cup tzatziki

An easy Greek take on lamb chops—grill and serve with creamy tzatziki.

Directions

  • Mix oil, lemon juice, lavender, garlic, and jalapeño.
  • Slice lamb rack into chops, and place in a glass baking dish.
  • Pour on marinade.
  • Cover and refrigerate for 4 hours.
  • Remove from marinade and discard marinade.
  • Grill over coals coated with grey ash for 3 minutes per side, or to desired degree of doneness.
  • Serve with tzatziki.
