Roasted Asparagus with Red Onions and Feta

Ingredients

  • 1 lb asparagus, trimmed and cut into 1 1/2-inch pieces

  • 1 red onion, diced

  • 1/4 cup olive oil

  • 1 Tbs freshly squeezed lemon juice

  • 1 1/2 tsp salt

  • 1 tsp black pepper

  • 1/4 cup crumbled feta cheese, more if desired

A festive vegetarian side dish.

Directions

  • Toss asparagus and red onion with olive oil, lemon juice, salt, and pepper.
  • Spread in a baking dish and cook at 450°F for about 15 minutes until tender. Stir halfway through cooking.
  • Immediately transfer to a serving dish and stir in feta. Serve.
