Southern Turnip Greens

Ingredients

  • 2 Tbs olive oil

  • 6 turnip roots, diced

  • 1 large sweet onion, diced

  • 1 pinch salt

  • 1 lb turnip greens

  • Water

  • 1 smoked ham hock (or turkey)

Turnip greens and their roots are a Southern staple—drizzle with hot pepper sauce to add heat.

Directions

  • Preheat a large soup pot. Drizzle with oil. Add turnip roots and onions. Add a little kosher salt. Sauté until the roots begin to be transparent.
  • Add turnip greens, then add water about 1/3 way up the pot so that 1/3 of the fresh greens are in the water.
  • Add a little more kosher salt and the ham hock. Don't stir for a while and leave turnip roots and onions on the bottom so they can cook more.
  • Cook the turnip greens and their roots for a couple of hours, over medium-low heat. Cook until almost all of the water has evaporated.
