Chicken Parmesan

Ingredients

  • 1/2 cup vegetable oil for frying (less if needed)

  • 1 egg

  • 4 boneless, skinless chicken breasts

  • 1 cup Italian-style bread crumbs

  • 1/4 cup Parmesan cheese

  • 1 tsp dried Italian herb mix

  • 1/2 tsp kosher salt

  • 1/2 tsp pepper

  • Sauce2 Tbs olive oil

  • 1/4 sweet onion, diced

  • 2 cloves garlic, minced

  • 1 pinch kosher salt

  • 1 28 oz can Italian tomatoes with basil flavor

  • 1 6 oz can tomato paste

  • 1 tsp dried Italian herb mix

  • 1 12 oz package pasta, cooked according to package directions

Comforting and saucy—fried chicken breasts sit atop spaghetti.

Directions

  • Preheat saucepan for sauce. Drizzle with 2 Tbs olive oil. Add onions and garlic and sauté until translucent. Add kosher salt. Add tomatoes, tomato paste, and herbs. Bring to a boil, then reduce to a simmer.
  • Over medium heat, preheat around 1 inch of vegetable oil in a large skillet for frying the chicken.
  • Whisk the egg and dip chicken in eggs. Add bread crumbs, Parmesan, herbs, salt, and pepper to a large bowl. Dredge chicken in bread crumb mixture. Fry chicken until browned.
  • While chicken is frying and sauce is simmering, prepare pasta according to package directions. Drain pasta and add half of the sauce to the pasta.
  • Serve chicken over pasta, topped with more sauce. Add more Parmesan if desired.
