Spicy Sausage Spaghetti

Ingredients

  • 1 1/2 Tbs olive oil

  • 1 lb Polish sausage (or smoked sausage), sliced

  • 1/2 onion, diced

  • 1/4 tsp crushed red pepper flakes

  • 1 15 oz can garbanzo beans, rinsed and drained

  • 1/2 lb frozen, chopped spinach

  • 1 15 oz can petite diced tomatoes

  • 2 tsp Cajun seasoning (or other spicy seasoning blend)

  • 1 lb spaghetti, cooked and drained

Spicy Polish sausage mingles with spinach in this easy pasta dish.

Directions

  • Heat oil in a large skillet. Add sausage, onion, and crushed red pepper flakes. Cook for about 5 to 8 minutes, until sausage starts to brown. Stir in garbanzo beans and spinach.
  • Add diced tomatoes and Cajun seasoning. Simmer for 10 minutes, stirring occasionally.
  • Add cooked spaghetti into the skillet and toss to coat. Simmer until heated through, about 3 minutes.
