Tequila Lime Chicken

Ingredients

  • 4 split chicken breasts (or 1 cut up, whole chicken)

  • 1 cup gold tequila

  • 4 limes, juiced

  • 1 orange, juiced

  • 4 cloves garlic, minced

  • 1 Tbs kosher salt

  • 1 tsp freshly ground black pepper

  • 1 Tbs chili powder (optional)

  • 1/2 tsp cayenne pepper (optional)

Baked in the oven—perfect for freeing up the grill on a summer weekend.

Directions

  • Place all ingredients except chicken in a 9 x 13-inch pan; mix well. Place chicken in and let marinate overnight.
  • Grill or bake at 425°F on a rack until internal temperature reaches 160°F and the skin is crispy.
  • Remove from oven, cover, and let rest until it reaches 165°F.
