Ingredients

  • 10 oz linguine (or flat rice noodles)

  • 1 cup chicken stock

  • 1/2 cup peanut butter

  • 1/4 cup soy sauce

  • 2 Tbs Thai sweet chili sauce

  • 3 Tbs rice vinegar

  • 3 cloves garlic, grated

  • 1 Tbs freshly grated ginger

  • 2 Tbs canola oil

  • 2 Tbs sesame oil

  • 1 lb fresh green beans

  • 1/2 cup peanuts

  • 1 green bell pepper, sliced

  • 1 red bell pepper, sliced

  • 2 cups matchstick-cut carrots

  • 8 green onions, sliced

  • 2 Tbs chopped fresh cilantro

Grab that box of linguine you have languishing in the cupboard and make this takeout favorite.

Directions

  • Cook pasta according to package directions.
  • Add chicken stock, peanut butter, soy sauce, Thai sweet chili sauce, rice vinegar, garlic, and ginger to a large bowl. Whisk until incorporated.
  • Preheat large skillet. Add canola and sesame oil. Add green beans and peanuts. Cook over high heat until green beans are tender-crisp and peanuts have lightly browned.
  • Add green bell peppers, red bell peppers, and carrots. Cook until peppers are tender-crisp. Add sauce and bring to a boil.
  • Add pasta and cook for 2–3 minutes. Add fresh green onions and fresh cilantro and pour into a serving platter. Serve immediately.
