Tuscan Turkey Vegetable Soup

Ingredients

  • 1 cup onion, chopped

  • 1 clove garlic, minced

  • 2 cups cooked turkey, diced

  • 1 Tbs olive oil

  • 1 can (1.45 oz.) Del Monte Organic Diced Tomatoes with Basil, Garlic and Oregano

  • 3 1/2 cups College Inn Organic Chicken Broth

  • 1 can (14.5 oz.) Del Monte Organic Cut Green Beans (drained)

  • Fresh basil, chopped

  • Parmesan cheese

Directions

  • In a large saucepan cook onion, garlic and turkey in oil until onion is tender. Add broth and undrained tomatoes. Bring to boil; reduce heat and simmer 10 min. Add green beans; heat through. Garnish with basil and parmesan cheese. Serve with whole wheat dinner rolls or bread sticks, if desired.
