Zucchini Fritters

Ingredients

  • 4 zucchini squash, shredded (about 4 cups)

  • 4 eggs

  • 1/2 cup flour

  • 1/2 tsp kosher salt

  • 1 pinch pepper, or to taste

  • 1/4 tsp nutmeg

  • 2 Tbs olive oil (more if needed)

Kids love veggies when they're fried up like this—serve dolloped with yogurt or sour cream.

Directions

  • Grate the zucchini in a large bowl over paper towels. Squeeze as much of the moisture out of the zucchini as possible before adding them to mixing bowl.
  • Combine grated zucchini, eggs, flour, salt, pepper, and nutmeg in a large mixing bowl.
  • Preheat large skillet, Drizzle with olive oil. Drop one large, overflowing tablespoon of the batter into the skillet; three of them should fit in skillet at the same time.
  • Cook until browned and crisp, try to only flip once. Transfer done zucchini fritters to paper towel-lined plate.
  • Serve with plain yogurt, sour cream, or hollandaise sauce, if desired.
