Grilled Carne Asada

Ingredients

  • 1 2 lb flank steak

  • 2 limes, juiced

  • 2 cloves garlic, chopped

  • 1/4 cup chopped onion

  • 1/4 cup chopped fresh cilantro

  • 2 Tbs white vinegar

  • 3 Tbs olive oil

  • 1 tsp cumin

  • 1 dash salt, or to taste

  • 1 dash pepper, or to taste

  • 2 Tbs vegetable oil for grilling

Wrap in a warm tortilla and top with pico de gallo and chopped avocado.

Directions

  • Preheat grill. Combine all ingredients, except steak, in a large bowl. Mix well.
  • Add steak and let it marinate for 1–3 hours. Letting it marinate for too long will make the meat soggy because the citrus and vinegar will start to cook the meat.
  • Brush grill grates with vegetable oil. Grill until you get a good sear on each side. Don't cook it more than medium, or it will become dry.
  • Make sure to let the steak rest for at least half of its cooking time. Slice perpendicular to grain of meat before serving.
