Herb Roasted Green Beans and Tomatoes

Ingredients

  • 2 lbs fresh green beans

  • 1 lb cherry tomatoes

  • 2 Tbs olive oil

  • 1 tsp kosher salt

  • 1 tsp dried Italian herb mix

A quick and easy summer side dish that goes great with anything from pasta to sandwiches.

Directions

  • Preheat oven to 400°F. Wash green beans and snap off ends. Wash tomatoes.
  • Place green beans in a baking dish and drizzle with olive oil; sprinkle with kosher salt and dried herbs.
  • Roast at 400°F until tender but still bright green, about 15–20 minutes, depending on size.
  • Place the tomatoes in a baking dish and drizzle with olive and sprinkle with kosher salt and dried herbs.
  • Roast them for about 10 minutes, or just until they start to burst. Serve warm.
