Slow-Cooker Pear Butter

Ingredients

  • 16 pears (of any variety), peeled, cored, and chopped

  • 4 cups water

  • 2 cups packed brown sugar

  • 2 lemons, juiced

  • 2 whole star anise

  • 1/2 tsp ginger

  • 1/2 tsp nutmeg

  • 1/4 tsp salt

Pack your slow-cooker full of pears so you'll have lots of pear butter to can.

Directions

  • Peel and core pears. Add to slow-cooker. Add water, sugar, lemon, and spices. Turn slow-cooker to high and bring to a bubble.
  • Turn to low and cook for 6–8 hours. Stir the pears about every hour or two.
  • Pear butter is done when it has a deep color, pears are cooked to pieces, and it has thickened. Do not forget to remove the anise cloves before you puree the pear butter. You may want to use an immersion blender to further puree the pear butter.
  • You can jar the pear butter by purchasing canning jars, sterilizing them, and running them in a water bath.
