Jackfruit Wonder Burger

Ingredients

2 Cans Jackfruit

1 ½ Tbsp. vegetable oil

4 Tbsp. barbecue sauce

1 ½ Tbsp. honey

1 Tbsp. apple cider vinegar

¾ tsp garlic powder

½ tsp salt

¼ tsp black pepper

¼ tsp cayenne pepper (optional)


Potato Wedges

7-8 baby purple potatoes, wedged

2 tsp vegetable oil

½ tsp garlic powder

½ tsp salt

¼ tsp black pepper


Cabbage Slaw

2 C shredded purple cabbage

1 Tbsp. lemon

1 Tbsp. veggie mayonnaise

¼ tsp black pepper


Veggies

Lettuce leaves

White onion

Tomatoes (optional)


Bread

Whole wheat burger buns


Special Sandwich Sauce (SSS)

Ingredients:

4 Tbsp. plant based mayo

2 Tbsp. tomato paste

¼ red onion, finely minced

1 Tbsp. apple cider vinegar

1 Tbsp. agave syrup

½ tsp salt

¼ tsp black pepper

Directions: Marinate jackfruit with garlic powder, salt, pepper, and oil and cook for about 5 minutes on medium heat. Begin to pull apart and separate the chunks of Jackfruit. Add barbecue sauce, honey, apple cider vinegar, and simmer on low-medium heat for 15-20 minutes, stirring occasionally. In the mean-time, prep your cabbage slaw, veggies and sauce. For slaw, slice finely and toss with ingredients. For the sauce, mix in a small bowl. Once your jackfruit is ready, scoop on to buns while hot, top with slaw and veggies and Special Sandwich Sauce, and you’re good to go! Enjoy!
