Tofu BLT

Makes 3-4 sandwiches

Ingredients

Tofu

1 pack of extra firm tofu


Tofu Marinate

2 Tbsp soy sauce

1 Tbsp maple syrup

1 Tbsp vegetable oil

1 tsp onion powder

½ tsp garlic powder

¼ tsp black pepper


Mayo sauce

¼ C vegan mayonnaise

¼ a red onion, minced

3 Tbsp capers, minced

1 Tbsp white wine vinegar

¼ tsp salt

A few dashes of black pepper


Veggies

Tomatoes

Lettuce

Purple onion


Bread

Whole grain bread by Dave’s Bread

Directions

  • Slice your tofu block into thin strips. Mix the marinate in a small bowl. Pour over the tofu and let sit for 10-15 minutes before cooking.
  • Lightly oil a non-stick pan and set to medium-high heat, place the strips and cook until golden brown (3-5 min), then flip over and cook the other side.
  • Mix the ingredients for the mayo sauce.
  • Toast the bread, spread the sauce, build the sandwich starting with the lettuce, two layers of tofu bacon, tomato, purple onion and another layer of lettuce. Top with bread. Enjoy!
