Peanut Butter & Date Energy Balls

Makes 25-30 balls

Ingredients

2 C roasted rolled oats

1 ½ C puffed rice

2 C all-natural smooth peanut butter

½ C chocolate chips

1/3 C honey

7 pitted medjool dates

2 Tbsp chia seeds

2 Tbsp coconut oil

1 tsp vanilla extract

½ tsp salt

Directions

  • Spread oats on to a baking tray lined with parchment paper. Place in the oven for 10 minutes at 350 degrees.
  • In a large bowl, place puffed rice, peanut butter, mashed dates and the remaining ingredients with the chocolate chips on the top, then pour out the oats while still hot and let it sit over the ingredients for a minute or two. This will cause the chocolate chips to melt slightly. Now begin to work the ingredients together using a spatula first then your hands. Squeeze ingredients through your fingers until fully incorporated and partly sticky.
  • Now begin to press a handful into your hands to form balls that are just under 2-inches wide. Roll into a plate with shredded coconut and press into the ball. Line in an airtight container.
  • Store in the fridge. These can store very well for several weeks while refrigerated. Enjoy!
