Chocolate Chip Macadamia Nut Cookies



1 ½ C flour

½ sugar

¼ C coconut

1/3 C macadamia nuts, crushed

1/3 C chocolate chips, chopped

1 Tbsp. flaxseed meal

1 tsp baking powder

½ tsp salt


4 Tbsp. coconut oil

3 Tbsp. canola oil

3 Tbsp. water

2 Tbsp. almond milk

1 Tbsp. peanut butter

½ tsp vanilla extract

½ tsp Champaign vinegar


  • Place the 3 Tbsp. of water in the microwave with the flaxseed meal for 25 seconds, mix until sticky. Set aside.
  • In a small bowl, melt the coconut oil by placing in the microwave for 20 seconds, mix until well melted.
  • Add the remaining wet ingredients and mix until fully incorporated.
  • Mix the dry ingredients then add the wet ingredients, mix until well incorporated.
  • Place parchment paper on a pan, make 1.5-inch wide balls, press and mold into the pan to desired thickness. If you prefer it more moist leave it at a little less than ½ an inch thick. Set oven to 325 degrees for 15-20 minutes.
  • Remove from heat, let cool, store in an airtight Tupperware. Enjoy!
