Slow Cooker Sweet Potato Chili

Great option for meal prep

3 C sweet potato, cubed

1 large purple onion, chopped

1 Red bell pepper, chopped

1 Green bell pepper, chopped

2 Cans black beans by Cadia, rinsed, strained

1 Can fire roasted tomatoes by Muir Glen

¾ C quinoa

1 Carton vegetable broth, Cadia

3 cloves garlic, minced

1 Tbsp oil

3 tsp cumin

2 tsp paprika

1 ½ tsp chili powder

1 ½ tsp salt

¼ tsp black pepper


Garnish

Avocado slices

Red chili flakes

Cilantro

Directions

  • Prep veggies.
  • Pour in vegetable broth into slow cooker pot, set at high for about 4 hours (it may be ready before then, check at 3 hours and 30 minutes). After the first 20 minutes add all the remaining ingredients, mix, cover with lid, and check in every hour to give it a light mix.
  • Once ready, remove lid, let it cool for a few minutes, plate, top with chili flakes, avocado and cilantro, enjoy!
