Coconut Peppermint Bonbons

Makes 24-26 1-inch wide bonbons

Ingredients


Bonbon

1 ½ C shredded coconut

1 ½ C coconut flour by Bob’s Red Mill

1 C cashew butter by Clark’s

½ C coconut cream by Thai

½ C maple syrup by Natural Value

2 Tbsp coconut oil by Cadia

½ tsp peppermint extract by Flav-Organics

½ tsp vanilla extract by Flav-Organics

¼ tsp salt


Chocolate

1 C vegan chocolate chips by Pascha

1 Tbsp smooth peanut butter by Cadia

1 Tbsp coconut oil

1 Tbsp dark cocoa powder by Ghirardeli

A few drops of peppermint extract


Peppermint candy, crushed, used to decorate


Directions

  • In a bowl mix in all the ingredients for the bonbons. Use your hands to fully incorporate the ingredients. Line a pan with parchment paper and using your hands again create 1-inch wide balls, place on the parchment paper then place in the freezer to chill for a few minutes.
  • Next, in a small bowl place your chocolate chips, peanut butter and coconut oil in the microwave for about 30 seconds. Mix until completely melted and smooth. If it’s still lumpy place back in the microwave for another 20 seconds. Once mixed, add the cocoa powder and peppermint extract, mix until smooth.
  • Remove your tray from the freezer and using a small plate with parchment paper spoon a little chocolate on to the parchment paper and place one of the balls on it, then spoon chocolate on to the ball until completely covered, using two spoons gently lift the ball and place back on the tray and repeat until complete.
  • Place tray in the freezer for about 2 hours or so to chill and set. Your bonbons are now ready! Can be stored in the fridge after, or freezer, just allow to thaw for a few minutes if you place it in the freezer before eating. Enjoy!
