No-Bake Peach Tart

Serves 8

Pie crust:

  • 2 packs of graham crackers
  • 1 C of crushed pecans
  • 3 Tbsp. coconut oil
  • 2 Tbsp. coconut milk
  • 1 Tbsp. shredded coconut
  • a few dashes of sea salt

Filling:

  • 2 C of Vanilla yogurt
  • 1-2 tsp of instant clear jell

Topping:

  • Ripe fresh peaches, or nectarines, sliced evenly

Glaze:

  • ½ C Apple juice
  • 1 tsp starch

Directions: Crust: Use food processor to grind down graham crackers, then add the pecans, blend until fully crushed. Place in a mixing bowl, add remaining ingredients, use your hands to incorporate. Spread and press into pie mold evenly, place in the freezer for an hour. Filing: So-easy! Just get your favorite vanilla yogurt, add instant clear jell, mix thoroughly and let sit in the fridge for a few minutes, and that’s it! Topping, slice fruit of your choice into thin and equal slices. Glaze: heat apple juice with starch in a small pot until boiling, lower heat and keep mixing for about 5 minutes, set aside to cool. Pull out pie crust from freezer, spread out the filling evenly, place the fruit slices in circular patterns against each other. Use a cooking brush to spread glaze gently on fruit. Refrigerate pie for 20 minutes, slice, enjoy!
