Powered-Up Breakfast Burritos

Vegetarian

Serves 4-6

Ingredients:

  • 3-4 medium sized yams
  • 1 bunch of black kale
  • 2 cans of black beans
  • 1 medium purple onion
  • 6 eggs
  • ½ C of milk
  • 2-3 ripe avocados
  • ½ lemon
  • 1 pack of whole wheat tortillas
  • vegetable oil (amount to follow)

Seasonings:

  • Salt + black pepper
  • Taco-seasoning
  • Garlic powder

Tortilla:

  • Whole wheat or white


Directions:

Start with yams, cut up into small cubes, place in a large bowl, add 1 Tbsp. vegetable oil, 1 tsp of salt, ½ tsp of black pepper, ½ tsp of taco seasoning, a few dashes of garlic powder. Pop in the oven at 350 degrees for 30 min, broil for 5-7 min, remove from oven. Dice up onion, cook on stove with 1 Tbsp. vegetable oil until golden, drain water from beans and add in, cook for 10-15 min, add salt and black pepper. Set aside to cool, then mash with potato masher. Set aside. Whisk eggs, add pepper and salt to taste, add milk, scramble, set aside. Mash avocados, add salt, lemon and garlic powder, set aside. Massage kale, cut up strips. Take warmed tortilla, add layer of beans, yams, eggs, avocado, and kale, wrap, slice, serve! Enjoy!
