Mediterranean Beet Salad

Mediterranean Style Beet Salad

Serves 4-6

Vegan, Gluten-Free

  • 3 large beets
  • 1 bunch of fresh parsley
  • juice of half a lemon
  • 1 medium clove of garlic
  • 1 Tbsp olive oil
  • 1 Tbsp sesame seeds
  • ½ tsp salt, or more as desired

Directions: Steam beets for 1 hour until cooked through. Set aside to cool. Cut into half inch cubes. Mix with chopped fresh parsley. Smash garlic, add olive oil, salt, and lemon and mix well. Sprinkle with sesame seeds. Enjoy!
