Strawberry Chia Seed Pudding

Vegan . GF

Serves 4

Chia seed pudding:

  • 1 C chia seeds (white or black)
  • 4 C of vanilla almond milk, or soy milk
  • 2 Tbsp. maple syrup, or honey
  • 2 Tbsp. shredded coconut
  • 2 Tbsp. crushed walnuts
  • 1 tsp vanilla extract
  • 1 tsp Orange Blossom water (optional)

Strawberry Sauce

  • 1 C fresh strawberries
  • ½ C frozen strawberries
  • 3 Tbsp. maple syrup
  • 1 Tbsp. water


Garnish: fresh strawberries slices

Directions: Mix in contents of chia seed pudding, after mixing for 1 minute microwave for about 40-50 seconds. Mix again for another 2-3 minutes. You’ll notice mix will already begin to thicken. Place in a container with a lid and let it chill overnight. Strawberry syrup: use a food processor and pulse ingredients for saucy consistency (add water if you’d like it thinner). Place in glass containers, layer and style with your choice of fresh berries. Add strawberry suance on top of pudding, or mix in, enjoy!
