Mediterranean Grape Leaves

  • 1 glass jar of Divina Grape Leaves
  • 1 C white round rice
  • 2 medium sized onions, diced
  • 2 medium sized tomatoes, chopped
  • Juice of 1 large lemon
  • 1-2 carrots, sliced
  • ½ bunch of fresh parsley, chopped
  • 3 Tbsp. tomato paste,
  • 2 Tbsp. vegetable oil
  • 2-3 cloves of garlic, mashed
  • 1 tsp of salt
  • 1 tsp of black pepper
  • ½ tsp of cinnamon

Tzatziki

  • 1 Tender Green cucumber
  • 2 C of plain yogurt
  • 1 clove garlic, mashed
  • 1 tsp dried mint
  • 1 tsp salt


Directions:

Mix all contents for grape leaves in a large bowl, except for carrots and lemon. Drain grape leaves, separate from each other, lay flat on a plate, scoop a thumb sized amount of the rice stuffing in the center of the leaf, this part is a little tricky, wrap the stuffed grape leaf in the same way you’d wrap a burrito. Slice carrots and spread on the base of the pot. Lay out and pack grape leaf rolls together on top of carrots, may form 2 or 3 layers depending on what size pot you use. When finished add enough water to barely cover the top, add juice of one lemon and another tsp of salt. Bring to a boil, then cook on low heat for 30-35 minutes until water is fully absorbed. Test one, if rice is cooked through, turn off heat. Let cool for a few minutes. Serve with tzatziki sauce!
